@Rags: Good question. A difficult one also. I actually had to call someone, who use to do farming, to get the answer. And here is it:
This thing (I don't know what they call it) is tied on bulls mouth to keep their head up so they can walk and work faster. Technically speaking, if this is not tied on their mouth the bull's head stays down in search of grass to eat which makes them walk slower.
By putting this thing on their mouth they also understand it's time to work not eat. Something an animal mind needs to be reminded frequently otherwise. Like those side covers on horse's eyes, you know. To keep their heads straight. :-)

Works so well as a tight crop, particularly in mono I feel. A terrific photograph and interesting explaination of the ropes.
